Lavender Shortbread

Ingredients
- 160g plain flour
- 100g unsalted butter
- 75g caster sugar
- 1 1/2 tsp dried lavender
- 1 egg yolk
- A little extra caster sugar to cover biscuits
Method
Step 1
Preheat the oven to 170°C and line a baking tray with greaseproof paper.
Step 2
Mix together all the ingredients (except the egg yolk) in a food processor until it resembles breadcrumbs. Add the egg yolk and mix again until a soft dough forms.
Step 3
Turn the dough out onto a flat, clean surface and roll to about 1cm thick. Use a cookie cutter to cut out shapes and place them on the baking tray.
Step 4
Bake the cookies for 8-10 mins, checking half way through and turning the tray around if needed to ensure they bake evenly.
Step 5
Once they are lightly golden, remove from the oven and let them cool on a wire rack. Once they are cool, sprinkle with caster sugar.
