Tuna Salad Niçoise and Salad Dressing Recipe

Salad Nicoise
Nicoise Salad, or Salade Nicoise in French, is a classic salad. This salad comes from Nice, the second largest city on the Mediterranean coast of France.
Many people worldwide have adopted and changed the recipe, but many people agree on a common ingredient list. Because of this, the 'proper' recipe is hard to find. So, here’s our version!
We’ve also included how to make the niçoise salad dressing, elevating the taste of this classic meal.
Like most Niçoise Salad recipes, we've added olives, beans, tomatoes, boiled eggs, and fish. Unlike the traditional Mediterranean salad, we've included new potatoes and green beans. Perfect for a vitamin boosted, healthy meal on a hot, summer’s evening, or as a side dish at a barbeque.
Our Salade Nicoise Recipe
This recipe serves 2 and can be easily adjusted for the whole family.
Ingredients
For the salad
- Tuna (fresh steak or drained can)
- 6 Salad tomatoes, sliced into quarters
- 2 Eggs
- 6 new potatoes
- 100g fresh green beans
- A handful of good quality black olives
- A few fresh coriander sprigs
- Pepper to taste
For the dressing
- ½ garlic clove, crushed
- 1 tbsp Dijon mustard
- 2 tbsp red wine vinegar
- 4 tbsp olive oil
Method
- Boil the eggs for around 8 minutes (or less if you like a softer middle), allow to cool and remove the shell. Slice into quarters and set to one side.
- Cut the new potatoes in half. Boil them in slightly salted water for 10 to 15 minutes. They should be cooked through but not mushy.
- Boil the fresh green beans in slightly salted water for 5 minutes. Drain both the potatoes and green beans and allow them to cool completely.
- If you have a fresh tuna steak, drizzle it lightly with oil. Then, cook it in a hot frying pan for 1-2 minutes on each side. Allow to cool and then gently pull apart with two forks. If you’re using canned tune, drain the juice or water.
- To make the dressing, mix all the ingredients and add a pinch of salt to taste.
- Assemble your salad by putting all the ingredients, except for the coriander and pepper, into a large bowl. Toss the salad with the dressing. Finally, dot around sprigs of coriander and a few twists of pepper to finish the effect.
Pro Tip: Change the tuna to salmon to turn this meal into Salmon Salad Nicoise.
