How to make Banana Bread
This recipe cuts into 8 to 10 slices.
Ingredients
- 140g Softened Butter (Plus extra for the tin)
- 140g Caster Sugar
- 2 Large Eggs (Beaten)
- 140g Self-raising Flour
- 1 tsp Baking Powder
- 1 tsp Vanilla Extract
- 3 Very Ripe Bananas (the softer the better)
- 50g Icing Sugar
Optional
- Handful Dried Banana Chips
- 100g Chocolate Chips
Method
- Preheat your oven to 180C/160C fan/Gas 4.
- Butter a loaf tin and line the base and sides with parchment paper.
- Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add in the 2 beaten eggs.
- Fold in the flour with the baking powder, vanilla extract and 2 mashed bananas.
- If you’re adding them in, fold in the chocolate chips.
- Pour your mixture into the tin, slice your remaining banana in half and slightly push into the top. Bake for 50 minutes or until cooked through.
Let your banana bread cool down and enjoy!
Pro Tip: Mix half of your batter with 2 tablespoons of cocoa powder. Swirl the two mixes together to make chocolate swirl banana bread.
