Hearty One-Pot Chicken Casserole

As the summer months come to an end and the sun sets a little earlier and rises a little later, it’s time to start enjoying those heartier meals. With the chillier days rolling in with the rain, salads and lighter meals just won’t cut it, so enjoy our One-Pot Chicken Casserole recipe. Perfect for those dark nights when you simply want to curl up in your favourite spot and not worry about the washing up.
Chicken casseroles are a versatile meal, you can add any veg or seasonings to the pot and it’ll turn out just as delicious. We’ve added leaks, carrots, peas and potatoes into our recipe but feel free to add more (or take an ingredient out).
Chicken Casserole Recipe
This recipe serves 4.
Ingredients
- 8 Chicken Thighs
- 1 tbsp oil
- 1 White Onion (Sliced or Diced)
- 2 tbsp Plain Flour
- 2 Chicken Stock Cubes
- 2 Large Carrots (Cut into Batons)
- 1 Large Leak (Sliced)
- 400g New Potatoes (Cut in Half)
- 200g Frozen Peas
- 1 tbsp Grainy Mustard
- Herbs (Basil, Parsley, Thyme, Oregano and Coriander)
- 3 Garlic Cloves
- Salt
- Pepper
Method
- In a wide pan or casserole dish, fry the 8 chicken thighs in 1 tbsp oil. Season the chicken with salt and pepper.
- Stir in your crushed garlic and onion with 2 tbsp plain flour and 2 chicken stock cubes until the flour is mixed. Gradually stir in 750ml hot water.
- Add in your 2 large carrots, leak slices and 400g new potatoes. Bring your casserole to a simmer and cover the pot with a lid for 20 minutes.
- Simmer for another 15 minutes with the lid removed and throw in 200g peas. Simmer for another 5 minutes.
- Add in your seasonings and stir in 1 tbsp grainy mustard.
Serve in a bowl or on a plate with fresh broccoli, mashed potatoes or buttered bread.

Can this be made in the slow cooker?
Absolutely. Follow the recipe as is but when it comes time to add your water and veggies, transfer everything into your slow cooker. Then cook on low for 7 hours or on high for 4 hours.
