How to make Lemon Drizzle Cake
Ingredients:
For the Cake
- 225g unsalted butter, softened
- 225g caster sugar
- 4 eggs
- 225g self-raising flour
- 1 lemon, zested
For the Drizzle Topping
- 1½ lemons, juiced
- 85g caster sugar
Method:
- Preheat the oven to 180C/160C fan/Gas 4 and line a loaf tin (8cm by 21cm) with greaseproof paper.
- Beat together the butter and caster sugar until a pale and creamy consistency. Once done add your eggs one at a time, slowly mixing until everything is fully combined.
- Sift in the self-raising flour to the mixture, folding it gently until everything is smooth. Once done, add the lemon zest and mix until combined.
- Gently pour your cake batter into the lined loaf tin. Bake in the oven for around 45-50 minutes. Check if it's done by inserting a thin skewer into the centre. It should come out clean.
- Whilst the cake is cooling, mix the lemon juice and caster sugar until smooth to make the perfect glaze.
- Poke the warm cake all over with a skewer or fork. Pour the drizzle all over the top of the cake to cover it completely. The juice will then sink into the cake and your sugar glaze will form a lovely, crisp topping.
