45g butter, room temperature
¼ cup honey
100g brown sugar
1 tbsp water
120g whole wheat flour (plain flour also works)
½ tsp salt
¼ tsp baking powder
350g rolled oats
Chocolate chips or chopped nuts, etc (optional)
(Makes 25-30 cookies)
- Preheat your oven to 180°C, 160°C fan, gas mark 4. Line a baking tray with greaseproof paper.
- Using a mixer with the paddle attachment, mix together the butter, honey, brown sugar, egg and water thoroughly. If you don’t have a mixer, then you can also use a reliable wooden spoon and mixing bowl!
- Sift together the dry ingredients then stir in the oats. Add the dry ingredients to the wet and mix. Add any additional ingredients you’ve chosen like choc chips or nuts. Cool the mixture in the fridge for 15-20 mins.
- Drop heaped teaspoonfuls onto the baking tray and bake 12 to 15 minutes. Cool on a wire rack and then enjoy, sat in your favourite chair with a cup of tea.
