Picnic Slices Recipe

“This is a recipe that reminds me of baking with my mum growing up. We would always make a tray for fundraising events and it was always a winner. It also freezes well so it’s handy for any unexpected guests.”

Ingredients
Makes 10-12 slices
- 8oz milk chocolate
- 4oz butter or margarine
- 8oz desiccated coconut
- 8oz caster sugar
- 2 beaten eggs
- 4oz sultanas
- 4oz glace cherries, quartered
Method
Step 1
Preheat the oven to 140C/120C fan/gas mark 1
Step 2
Break the chocolate into pieces and melt. Pour into the bottom of a Swiss roll tin lined with foil, then allow to set.
Step 3
Cream the butter and sugar together until light and fluffy. Add the beaten egg, coconut, sultanas and glace cherries. Mix well and spread evenly over the set chocolate.
Step 4
Bake for 45 minutes until golden brown. Remove from the oven and leave to cool for 10 minutes, then mark into squares (don’t cut all the way yet).
Step 5
Leave until cold and then finish cutting into the squares. Enjoy a piece or two with a nice cuppa!
